When using MSFS I can see the simconnect variables and some MSFS variables but for example, I don't see any G1000 variables when flying the Baron G58. I am specifically looking for the G1000 nose up and nose down commands but don't see them. Will these variables/commands eventually become available?

All G1000 Keys/Commands that are exposed are available.
Check in the eventmonitor what happens when you press them in the UI.
Since the G58 is a premium/deluxe aircraft, it is drm protected (excrypted), and it cannot be checked what it does internally to be able to mimic the UI behaviour.
